Green curry with tofu is my favorite Thai dish! I eat meat, but I just really enjoy the tofu in it. Do you have any mocktail pairing recommendations by chance? I'm a recovering alcoholic.

Hi Megan! Thanks for reading. I would pair a lemongrass iced tea. Make a simple syrup of equal portions sugar and water and simmer to dissolve the sugar. Add in roughly chopped lemon grass and gently simmer for about 30 minutes to infuse. Add in tea bags (green or black, depending on your preference) and steep until you like it. Strain and chill. I hope this helps!

Stay cool out there, Erin! This dish looks absolutely mouthwatering. (FWIW, I loved the line "I couldn’t find them, nor did I look very hard, because I don’t like them." 😅 Relatable!!)

Thanks, Maddie! It’s a bit of work, but totally worth it. And those eggplants…not for me 😁

Love the variety of wine pairing options! I usually go the Sauvignon Blanc route with green curry, so I'll have to pull out a favorite rosé next time.

Do it! There’s no one size fits all for wine pairings, of course, but I really like rosé as a pairing. 🥂
